GRAPES: 100% Pinot Noir.
AGEING: Manual harvest, first press exclusively vinified in plot vats and in barrels. Reserve wines aged in casks (soléra). Aging on slats in traditional chalk pits.
BLEND: Wines from identified localities, mostly on a northern slope, were chosen to compose this cuvée and reveal the magnificence of the great Pinot Noir from Mailly Champagne.
DOSAGE: 8 g of sugar per litre.
Identity cuvée of the Mailly style which combines, with great precision, the delicate freshness of citrus fruits with a velvety maturity carried by notes of roasted exotic fruits and ripe wheat. The palate reveals a calmed vivacity: the flesh of the wine becomes unctuous, awakened by the energy of the citrus fruits. The balance extends in a slender way on a finely spicy structure which confers a thirst-quenching saline finish.
Its suppleness and fruitiness work wonders during a dinner aperitif. It goes well with foie gras in all its forms. Pan-fried seafood, scallops with fleur de sel, roasted turbot in white butter and fine poultry do it justice. Also dare to invite him to cheese time.
