Colour: Browned butter
N: Warm sunny bananas, dried mango, toasted coconut with roasted cashew nuts. Keeping with the lovely warmth we also have golden caster sugar coating golden raisins. While all very tropical at first blush, take note of the darker funkier notes that develop along the way. Look for warm hay in a horse barn, roasted agave, and star anise
P: Oh! The warm bananas have become unripe ones, maybe they’re even plantain crisps? The palate even has a little mezcal pepperiness. Our tropical rum has become a little savoury number.
F: Foam bananas make a delightful appearance with a long warming length before drawing you back in for another sip.
