This limited-release collection of 100% rye whiskies is designed to demonstrate the many facets of flavour that rye grain can evoke. Much like the spectrum of single malts distilled in Scotland, or the bountiful array of corn bourbons made in America, we aim to share with you the many realms of rye that Canadian whisky has to offer.
Each expression will explore a distinct area of the flavour wheel, unconventional for the average rye whisky. Absent of any added flavourings or colourants, with no specialty finishing barrels used in the aging process, all tasting notes and flavours in each whisky has been amplified through the fermentation, maturation, and blending process only.
Realms of Rye - Release No 03 ‘Menthol & Evergreen’
The much anticipated third release from the Realms of Rye series, dives deeper into the flavour spectrum of rye grain. This expression was expertly blended by the whisky-making team at Sons of Vancouver Distillery, with barrels carefully chosen and married to evoke vegetal flavours of menthol & evergreen.
Release 03 ‘Menthol & Evergreen’ provides a stroll through a lush forest of conifers, wild herbs, and dense moss. The character of the rye grain provides notes of eucalyptus, pine needles, dill weed, and sweet grass. Maturation in ex-bourbon and new oak barrels provides a backbone of mint chocolate, green walnut, and cut lumber.
Following the precise standards set for the Realms of Rye series, all the flavour in this whisky comes from the fermentation, distillation, maturation, and blending process alone.
This whisky is completely unfiltered; no flavouring or colouring has been added, and no finishing barrels were used to achieve this plant-forward palate
