From the Distillery:
Very excited to announce our newest product release: Bottled-in-Bond American Single Malt Whiskey. It is made from a mash bill of 100% non-GMO malted barley grown in California, Washington and Ireland. We mill, mash, ferment, distill, barrel-age and bottle it on site. This one really stands out because it is our oldest whiskey to date, having been barrel aged for the last 4 and a half years. .
A Bottled-in-Bond whiskey must be made by the same distiller, in the same distilling season, aged more than 4 years in oak barrels in a federally bonded warehouse and bottled at 100 proof (50% alcohol by volume.) It is a designation that speaks to artisanal quality, purity and vintage. We distilled our inaugural batch in 2015, soon after we opened for production. Since then it has been resting and maturing 53 gallon charred oak casks. .
Like all our whiskies, we made it with our 250 gallon Vendome all-copper pot still. It is rich and malty with notes of dark chocolate and toasted coconut and a sweet caramel finish. At 100 proof, it has a nice level of heat and a long, lingering finish. .
Our Single Malt is a true rarity. Of all the American whiskies out there, it is, to our knowledge, only the second ever Bottled-in-Bond American Single Malt and the only one available on the West Coast!
