Join Dave at Keg n Cork on May 22 at 7pm for a journey through the life of the barrel!

Every great whisky begins somewhere unexpected — often in a vessel shaped by something else entirely. Before a cask ever holds whisky, it holds a story.

In this tasting, we trace that story from its origin. We begin by tasting the spirits that first seasoned each cask: the bold Oloroso sherry that stained the wood a deep mahogany, the honeyed Pedro Ximénez that left behind a whisper of dark fruit, the rum that pressed its tropical warmth into every grain, the red wine that wove tannin and berry into the timber’s core. These are the original occupants — the spirits that transformed raw oak into something alive.

Then, we taste what happens next.

Each whisky in the second flight was aged in one of those very casks, drawing out what was left behind — the residual sugars, the transformed wood compounds, the ghost of a former life. Side by side, you’ll discover a direct conversation between spirit and vessel: how a sherry-seasoned cask lends richness and dried fruit, how a rum cask coaxes out vanilla and spice, how wine-finished wood can soften or electrify a distillate.

This is not just a tasting. It is a masterclass in influence — in how one liquid shapes another, how time and oak conspire, and how the character of a whisky is determined long before the distillate ever arrives.

Come curious. Leave with a new understanding of what’s in your glass.
