Our 13 Year Old Aultmore has spent it’s time in refill ex-bourbon (the finest, hand picked, obvs) casks until we got our hands on it.
Dr. Whisky had this re-racked into a first-fill bourbon in 2019 for reasons that can only be disclosed in the secrecy of Bath Night. Fortunately for all of us, the time in first fill ex-Bourbon has done it’s magic, and this Aultmore is now a delicious single malt whisky.
Aultmore malt has always been revered by blenders as the perfect whisky to build up a blend. Today, the wort is clear, and fermentations are long. This, coupled with the small stills with downward lyne arms limiting reflux give the new make spirit intensity.
Slow distillation helps to maximise the reflux, but their shape also allows some heavier elements to come across.
Nose: A soft oiliness; peanut oil perhaps? Panettone, macaroons, grist, digestive biscuits. Followed by some citrus notes; grapefruit and lime.
This is absolutely normal and a bit of an industry secret. Four extra years ‘finishing’ in the first-fill ex-Bourbon Hogshead, and now it’s evolved into a textured, fruity, and outright delicious drop. Just remember - we don’t talk about Bath Night…
